Didier Dagueneau Vin de France Asteroide

Crafted in the Pouilly-Fumé district of the Loire Valley, France, Domaine Didier Dagueneau Vin de France 'Astéroïde' is an exceptionally rare, ultra-prestige white wine universally regarded as one of the rarest and most coveted expressions of Sauvignon Blanc in the world. Originally created by the legendary late iconoclast Didier Dagueneau and today masterfully carried forward by his son Louis-Benjamin, Astéroïde represents an uncompromising quest for purity and terroir precision. The wine is produced from a minuscule parcel of ungrafted (franc de pied) Sauvignon Blanc vines planted directly into flinty Silex soils, surviving entirely on their own original rootstocks. With fewer than 200 bottles produced in select vintages, this extraordinary cuvée is farmed biodynamically, hand-harvested with painstaking berry selection, and fermented using indigenous yeasts in custom-cured cigar-shaped oak barrels (cigares). The wine undergoes long maturation on fine lees to achieve unmatched depth, mineral intensity, and laser-like focus before being released under the humble Vin de France designation.

Food Pairing: Serve on its own as a profound, once-in-a-lifetime tasting experience, or pair with butter-poached langoustines, sea scallop carpaccio, wild turbot with caviar cream sauce, and aged Crottin de Chavignol goat cheese.
