Domaine Jean-Yves Devevey Beaune 1er Cru Pertuisots

Crafted in the heart of the Côte de Beaune, Burgundy, France, Domaine Jean-Yves Devevey Beaune 1er Cru 'Les Pertuisots' is an exceptional, highly artisanal red Pinot Noir produced by meticulous vigneron Jean-Yves Devevey. Operating out of Demigny, Devevey is revered for his low-intervention, certified organic approach to viticulture, focusing on soil life, low yields, and expressive terroir definition. The Premier Cru climate of Les Pertuisots is situated on the lower, gentle slopes of Beaune bordering Pommard, characterized by deep, iron-rich limestone-clay soils with excellent natural drainage. The hand-harvested Pinot Noir grapes undergo rigorous sorting followed by partial whole-cluster native yeast fermentation in wooden vats with gentle punching down (pigeage). The wine matures for 14 to 18 months in neutral and low-percentage new French oak barrels before being bottled unfined and unfiltered. The result is a Beaune Premier Cru of notable structural depth, refined red fruit purity, and earthy complexity.

Food Pairing: Roast duck breast with cherry reduction, roasted rack of lamb, pan-seared veal chops, roasted pheasant, wild mushroom risotto, coq au vin, and artisanal cheeses such as Époisses or Comté.
