About the Domaine de La Denante Pouilly Fuisse
Crafted in the famed Mâconnais region of southern Burgundy, France, Domaine de la Denante Pouilly-Fuissé is an exquisite, highly refined white Burgundy produced by the Martin family in Davayé. Sourced from estate-owned Chardonnay vines planted on the steep, sun-drenched slopes beneath the iconic limestone cliffs of Solutré and Vergisson, the vineyards benefit from a unique combination of Jurassic limestone and clay soils. Hand-harvested at optimal maturity, the fruit undergoes gentle pneumatic pressing and temperature-controlled fermentation in a combination of stainless steel tanks and French oak barrels. The wine matures on its fine lees for 10 to 12 months with periodic bâtonnage (lees stirring), integrating rich textural creaminess with electric natural acidity and chalky mineral drive. The result is an benchmark Pouilly-Fuissé that delivers a harmonious balance of vibrant citrus fruit, elegant toasted oak complexity, and persistent terroir focus.
Food Pairing: Pan-seared sea scallops, butter-poached lobster, roast chicken with tarragon cream sauce, grilled salmon, wild mushroom risotto, trout almondine, and artisanal cheeses such as Époisses or aged Comté.
