About the Domaine Rodolphe Demougeot Bourgogne Aligote
Crafted in the Côte de Beaune region of Burgundy, France, Domaine Rodolphe Demougeot Bourgogne Aligoté is an exceptional, vibrant white wine that showcases the true potential of Burgundy’s historic secondary white grape. Rodolphe Demougeot, established in Meursault in 1992, farms his vineyards using sustainable, organic practices with deep respect for soil health and vine longevity. Sourced from old-vine Aligoté parcels planted in the clay-limestone soils surrounding Meursault and Pommard, the vines benefit from ideal drainage and cool night breezes. Hand-harvested at optimal ripeness, the fruit undergoes gentle pneumatic pressing followed by indigenous yeast fermentation. The wine matures on its fine lees in neutral French oak barrels and stainless steel vats for 10 to 12 months with minimal intervention, resulting in an Aligoté of remarkable textural depth, electric acidity, and chalky mineral focus.
Food Pairing: Fresh oysters on the half shell, escargot à la Bourguignonne, goat cheese crostini (Gougères or Crottin de Chavignol), grilled sea bass, seafood ceviche, and traditional Kir cocktails (mixed with crème de cassis).
