Crafted in the famed Niigata Prefecture of Japan, Yoshinogawa Daiginjo Ultra Premium Sake is a masterwork of traditional sake brewing from one of the oldest operating breweries in Japan, founded in 1548. Located in Nagaoka, Yoshinogawa draws upon nearly five centuries of sake-making heritage, combining pristine natural resources with the refined, crisp tanrei karakuchi (light, dry, and clean) brewing style that defines Niigata sake. Made from 100% premium local sake rice milled down to an extraordinary 50% or less of its original grain size, the sake utilizes the ultra-pure, soft meltwater flowing from the surrounding snow-capped Niigata mountains. Brewed during the freezing winter months using labor-intensive low-temperature fermentation, a small amount of distilled brewer's alcohol is added near the end of fermentation to heighten aromatic lift and create a silky, ultra-refined texture. The result is an ethereal, highly aromatic Daiginjo that delivers an exquisite balance of lush tropical fruit perfume, crystalline clarity, and a refreshing, bone-dry finish.
