About the Domaine Matassa Coume de l'Olla Rouge
Crafted in the village of Calce within the Roussillon region of Southern France, Domaine Matassa 'Coume de l'Olla' Rouge is an extraordinary natural red wine produced by trailblazing winemaker Tom Lubbe. Sourced from biodynamically farmed old vines grown at high altitudes on dramatic slate, schist, and marl soils, this cuvée embodies Matassa’s radical commitment to minimal intervention. Typically composed of Grenache Noir and Grenache Gris co-fermented with a splash of Macabeu, the old vines yield small berries brimming with energy and minerality. The grapes undergo whole-bunch co-fermentation using indigenous yeasts in concrete tanks and traditional fiberglass vats without temperature control, oak aging, or added sulfur dioxide (zero-zero natural wine). The result is a vibrant, incredibly aromatic, low-alcohol red with high-toned fresh fruit, refreshing acidity, and raw Mediterranean terroir expression.
Food Pairing: Charcuterie boards with prosciutto and terrines, grilled sardines, roasted chicken with lemon and herbs, lamb skewers, mushroom tacos, and mild goat cheeses.
