About the Bodegas Cosme Palacio Crianza Blanco Rioja
Crafted in Laguardia within the heart of Rioja Alavesa, Spain, Bodegas Cosme Palacio Crianza Blanco is a pioneering barrel-fermented white wine that revolutionized modern Spanish winemaking. Founded in 1894 by Don Cosme Palacio, the winery blends historic traditions with modern innovation. Made primarily from 100% Viura (Macabeo) sourced from old bush vines planted in high-altitude, chalky clay soils at the foot of the Sierra de Cantabria, the grapes enjoy cool mountain air and generous sunshine. Hand-harvested and gently pressed, the free-run juice undergoes temperature-controlled fermentation in new French oak barrels. The wine is then aged on its fine lees with regular bâtonnage (lees stirring) for 8 months in French oak, followed by extended bottle resting. This meticulous barrel-aging process imparts a gorgeous, velvety texture and complex pastry notes while keeping Viura's crisp natural acidity and bright fruit expression at the forefront.
Food Pairing: Pan-seared sea bass, butter-poached lobster, roasted chicken with herbs, grilled pork tenderloin, mushroom risotto, creamy pasta dishes, and aged Manchego cheese.
