About the Azienda Agricola Corteforte Valpolicella Ripasso Classico Superiore
Crafted in the historic heart of Fumane within Veneto’s famed Valpolicella Classica zone, Corteforte Valpolicella Ripasso Classico Superiore is a rich, beautifully textured Italian red wine produced by Carlo Cerutti. The estate takes its name from a 15th-century fortified estate (corte forte) nestled against hill slopes that offer exceptional sun exposure and well-drained limestone-clay soils. Traditional native grape varieties—Corvina, Corvinanone, Rondinella, and Oseleta—are hand-harvested and vinified using the traditional ripasso method. Fresh Valpolicella wine is re-fermented on the warm, nutrient-rich grape pomace remaining from the estate's Amarone production, acquiring extra body, depth, color, and aromatic complexity. The wine is then matured for approximately 12 to 18 months in Slavonian oak casks and French oak barrels, followed by extended bottle resting.
Food Pairing: Braised beef short ribs, grilled ribeye steak, pork tenderloin with plum glaze, pasta with sausage ragù, roasted lamb chops, and aged cheeses like Parmigiano-Reggiano or Pecorino.
