About the Corte Pavone Brunello di Montalcino
Crafted in the high-altitude hills of Montalcino, Tuscany, Corte Pavone Brunello di Montalcino is an exceptional, biodynamically farmed red wine produced by winemaker Hayo Loacker and his family. Situated on the western slopes of Montalcino at nearly 500 meters above sea level, the estate benefits from cool breezes, mineral-rich galestro and schist soils, and pristine natural surroundings. The estate practices strict biodynamic viticulture, dividing its vineyards into individual micro-terroirs (cru selections) to express the nuanced character of Sangiovese Grosso. Hand-harvested with rigorous grape selection, the wine undergoes indigenous yeast fermentation in stainless steel and wooden oak vats. It is then aged for a minimum of 24 to 36 months in a combination of Slavonian oak casks (botti) and French oak barrels, followed by prolonged bottle aging. Corte Pavone delivers a harmonious synthesis of high-elevation fresh acidity, precise aromatic depth, and silky, structured tannins.
Food Pairing: Florentine steak (Bistecca alla Fiorentina), braised wild boar, roasted rack of lamb, osso buco, wild mushroom risotto, and aged Pecorino Toscano cheese.
