About the Core Elevation Sensation
Crafted in the high-elevation Santa Maria Valley of Santa Barbara County, California, Core Wine Co. 'Elevation Sensation' is a distinctive, artisan Rhone-style red blend created by winemaker Dave Corey. Sourced from the organically farmed Alta Mesa Vineyard—perched at an impressive 3,200 feet above sea level in the Cuyama Valley—the vines endure extreme diurnal temperature shifts, high solar radiation, and poor, stony soils. This rugged, high-altitude microclimate yields exceptionally small, concentrated berries packed with intense flavor, natural acidity, and structured polyphenols. Typically anchored by Grenache and Syrah, with supporting proportions of Mourvèdre or Carignan, 'Elevation Sensation' is fermented with native yeasts and aged in seasoned French and American oak barrels. The result is a bold, expressive Central Coast red that brilliantly reflects its high-altitude roots.
Food Pairing: Grilled ribeye steak, roasted leg of lamb with rosemary, braised pork shoulder, BBQ brisket, wild mushroom burgers, and aged sharp cheeses like Gouda or Manchego.
