Produced by Gilles Merlet and his sons Pierre and Luc at the historic Merlet distillery in Saint-Sauvant, Merlet Sélection Saint Sauvant is a limited-edition, artisanal XO cognac release. Named after the village in the Charente region where the family family established their distillery in 1850, this expression is a master blend of carefully chosen old eaux-de-vie sourced across multiple prestige crus, including Fine Champagne and Fins Bois. Maturing in French oak casks for well beyond the legal XO requirement, this expression yields an exceptionally harmonious balance of rich dried fruit, complex floral tones, delicate pastry notes, vanilla, and fine oak rancio.

Food Pairing: Aged Roquefort or Comte cheese, dark chocolate tarts, crème brûlée, spiced fruitcake, or enjoyed as a refined post-dinner digestif.
