Vallein Tercinier Hors d'Age Hélios Cognac

Crafted by the independent, family-run Domaine des Forges (est. 1850) in Chermignac, France. Named after the Greek sun god Hélios to honor its brilliant golden-amber radiant warmth, this prestige expression is a Fine Champagne blend composed of 100% Ugni Blanc grapes harvested from the premier growth regions of Grande Champagne and Petite Champagne. Double-distilled on the lees in traditional Charentais alembic copper pot stills, the eaux-de-vie in this blend are aged in French Limousin oak barrels for a minimum of 40 to 50 years. This extreme maturation delivers a masterclass in classic rancio, deep wood integration, and refined elegance.

Food Pairing: Pan-seared foie gras, aged Comté cheese, dark chocolate truffles, roasted figs with honey, tarte Tatin, and fine cigars.

Tasting Notes : Deep golden mahogany with luminous topaz and amber highlights and heavy, coating legs on the glass.

Nose : Seductive, opulent, and complex with aromas of candied orange peel, dried apricot, licorice, acacia honey, polished oak, beeswax, and a distinct, fragrant rancio.

Palate : Rich, supple, and velvety on the palate, revealing layers of stewed plum, ginger spice, dark cocoa, toasted hazelnut, leather, and subtle tobacco leaf.

Finish : Exceptionally long, warm, and harmonious, leaving a lingering impression of sweet dried fruits, soft oak tannins, and persistent rancio warmth.
