About the Codorniu Clasico Brut Cava
Crafted in Sant Sadurní d'Anoia in the heart of Penedès, Spain, Codorníu Clasico Brut Cava is an iconic sparkling wine from the oldest winemaking family in Spain and the pioneers who created the very first Cava in 1872. Made according to the strict traditional method (méthode traditionnelle) with secondary fermentation taking place inside the bottle, this cuvée honors Spain’s indigenous grape triad: Macabeo, Xarel-lo, and Parellada. Each varietal brings a distinct characteristic—Macabeo offers crisp fruitiness, Xarel-lo imparts structure and vital acidity, while Parellada contributes delicate floral aromatics. Aged on its lees in Codorníu’s historic underground cellars for at least 9 months, Clasico Brut delivers fine, persistent bubbles, refreshing citrus drive, and balanced, soft yeast complexities.
Food Pairing: Tapas, cured Spanish jamón Ibérico, fresh oysters, fried calamari, sushi, creamy soft cheeses like Brie, and light seafood paella.
