About the Domaine du Closel Savennieres Clos du Papillon
Crafted in the prestigious Savennières appellation of the Loire Valley, France, Domaine du Closel 'Clos du Papillon' is an extraordinary benchmark expression of Chenin Blanc from one of the region’s most famed single vineyards. Named for its unique butterfly-shaped topography, Clos du Papillon features a complex terroir of volcanic schist, sandstone, quartz, and purple slate bedrock. Practicing certified organic and biodynamic viticulture, owner Evelyne de Pontbriand allows long vegetative cycles to achieve ideal ripeness. Hand-harvested and indigenous-yeast fermented in neutral oak casks and foudres, this dry white wine combines razor-sharp acidity, rich stone fruit depth, and intense volcanic mineral tension.
Food Pairing: Pan-seared sea scallops, butter-poached lobster, roasted pork tenderloin with apples, braised veal cutlets, goat cheese crostini, and aged Comté cheese
