Cirka Gin Sauvage

Handcrafted in Montreal, Quebec, by Cirka Distilleries—the first microdistillery in Montreal to produce grain-to-glass spirits—Gin Sauvage is an homage to the vast, wild boreal forests of Quebec. Distilled in custom copper stills using 100% locally grown Quebec corn, this artisanal spirit is infused with over 30 wild, hand-foraged local botanicals, including wild bergamot, sweet gale, Labrador tea, balsam fir, and larch wood. The result is a complex, resinous, and deeply aromatic forest-forward gin with a silky grain foundation and layered boreal complexity.

Food Pairing: Seared duck breast with juniper jus, venison tartare, smoked trout, wild mushroom risotto, goat cheese crostini, or grilled salmon with herb butter.

Tasting Notes: Crystal clear in appearance with a smooth, rich, and velvety medium-to-full body.

Nose: Intensely aromatic and coniferous, opening with fresh pine needles, resinous balsam fir, and earthy spruce, supported by bright citrus zest, sweet floral bergamot, and herbal tea notes.

Palate: Richly layered, complex, and herbaceous, opening with crisp piney juniper berries and wild evergreen shoots before unfolding into herbal Labrador tea, peppery spice, citrus peel, and a subtle natural grain sweetness.

Finish: Long, warming, and forest-dry with lingering notes of crisp pine, aromatic herbs, and gentle peppery warmth.

Serve: Serve over large ice cubes topped with premium Indian or Mediterranean tonic water, garnished with a fresh sprig of rosemary or a strip of lemon peel, or as an earthy, elevated base for a Dry Martini, Last Word, or Negroni.
