About the Château de Pez Saint-Estephe
Crafted in the famed Saint-Estèphe appellation on the Left Bank of Bordeaux, France, Château de Pez is one of the oldest wine-producing estates in the region, with roots dating back to the 15th century. Purchased in 1995 by the legendary Champagne house Louis Roederer, the property has undergone substantial vineyard restructuring and state-of-the-art cellar modernization, elevating it to the very top tier of Saint-Estèphe. The 48-hectare vineyard sits on deep gravel terraces over a clay and limestone subsoil, providing ideal water retention and heat distribution. Dominated by Cabernet Sauvignon and Merlot, with small additions of Cabernet Franc and Petit Verdot, the fruit is hand-harvested and fermented parcel-by-parcel in temperature-controlled oak and stainless steel vats. Aged for 12 to 14 months in French oak barrels (40% new), Château de Pez is celebrated for its deep black fruit core, firm structural architecture, and classic Saint-Estèphe minerality.
Food Pairing: Prime dry-aged ribeye steak, roasted rack of lamb, braised beef short ribs, venison stew, wild mushroom risotto, and aged hard cheeses like Comté or sharp Gouda.
