About the Christophe Mignon ADN de Meunier Millesime 2016
Christophe Mignon ADN de Meunier Millésime 2016 is an exceptionally precise and terroir-expressive Extra Brut Champagne produced entirely from Pinot Meunier vines located in the Marne Valley villages of Festigny and Le Breuil. Crafted using biodynamic principles with a strict adherence to lunar cycles, this vintage Champagne presents a brilliant golden color with a fine, persistent effervescence. The bouquet opens with intense and complex aromas of ripe pear, bruised apple, citrus peel, and fresh brioche, complemented by delicate floral notes, toasted hazelnut, and an underlying wet-stone minerality. On the palate, it is medium-to-full-bodied, dry, and vividly structured, offering a concentrated core of stone fruit and citrus, anchored by a tight mineral backbone and vibrant acidity that culminates in a long, savory, and chalky finish.
Food Pairing: Pairs wonderfully with fresh oysters, seared sea scallops, pan-roasted poultry with cream sauce, truffle risotto, sushi, and aged Comté cheese.
