Chioccioli Fossivento Chianti Classico

Representing the Chioccioli family's "Chianti Classico Vision," the Fossivento cuvée is a meticulously crafted red that balances traditional structure with modern elegance. The grapes are hand-picked and cooled overnight before undergoing spontaneous fermentation—half in terracotta amphorae and half in temperature-controlled steel tanks. The wine is then aged for 14 to 16 months in a combination of third- and fourth-passage French oak barriques and amphorae. This complex aging process results in an intense ruby-red wine with garnet hues, offering a fragrant bouquet of red cherry, violets, and medicinal herbs. On the palate, it is fresh and savory with firm, "crunchy" tannins and a long, spicy persistence.
