Checkmate Fool's Mate Chardonnay 2022 is an exceptionally elegant and complex high-altitude Canadian white wine blended from five distinct estate vineyard sites across the southern Okanagan Valley. Fermented with wild yeast and aged in French oak barriques, foudres, and concrete eggs, it opens with bright aromas of Asian pear, fresh peach, citrus blossom, and subtle hints of graphite and toast. On the palate, it exhibits a full-bodied, rich texture with concentrated flavours of white nectarine, lemon curd, and melon, balanced by a vibrant mineral drive and a long, saline-tinged finish. Food Pairing: Pairs wonderfully with pan-seared halibut in lemon butter, roasted chicken, Dungeness crab, lobster bisque, and rich mushroom risotto.
