Chateau Pavie 2014

Chateau Pavie is a structured Saint-Emilion Grand Cru Classé red offering concentrated dark fruit, spice, and mineral notes. Full-bodied with firm tannins and balanced acidity, it delivers depth and power with a long, complex finish reflective of its Right Bank origin.

Food Pairing: Pairs best with steak, lamb, game meats, truffle dishes, and aged cheeses.

Incredible blueberries, violets, fresh wild mushrooms and sandalwood. Dried tannins. Full-bodied, yet tight and refined with a beautiful center palate of fruit and chalk character. Love the pinpointed palate. Excellent acidity. Gorgeous now but wait at least five years.

This gushes with boysenberry, acai berry and blackberry confiture notes, but they are quickly harnessed by fine chalky minerality that stays well-buried throughout, imparting mouthwatering cut despite the copious fruit. Presents lavish spice, licorice, fruit and minerality. If you’ve got it, flaunt it. Best from 2026 through 2040.

The 2014 Pavie is clearly the star of Gerard Perse's portfolio this year. The aromatics are the most complex and absorbing, a mixture of red and black fruit, graphite and black truffle, a faint marine influence emerging as it unfolds in the glass. The palate is medium-bodied and demonstrates less substance and glossiness than the Bellevue-Mondotte. In fact, if you had this blind you might describe it as a more classic Saint Emilion, underpinned by quite firm tannin that provide this with impressive backbone. There is a toughness to this Pavie, but it retains balance. It has its sights set on longevity and for that we will have to wait, but it will be worth it.

This is a perfumed ripe wine, packed with generous tannins that still give a style and elegance that is a remove from the older overripe style of Pavie. It is balanced, complex and with great potential. The wood and the tannins are in harmony with the black fruits. With its structure, it will certainly age well. Drink from 2027.

More to the British taste with all that Cabernet (a record for the Cabernet Sauvignon). Long and linear with plenty of freshness. Firmly structured but a touch more finesse than in the past. Saline note on the finish.
