Chateau de Montifaud XO Fine Petite Champagne Cognac

Chateau de Montifaud XO Fine Petite Champagne Cognac is an estate-produced Cognac from the Vallet family's Chateau de Montifaud, crafted from eaux-de-vie grown in the Petite Champagne cru. Distilled slowly with abundant lees, it is matured for many years first in French Limousin oak and then in older casks in the estate's cellars. The XO is considerably older than the minimum required for its classification and develops a refined combination of dried flowers, dried fruit, nuts, spice and mature rancio while retaining freshness and exceptionally soft tannins.

Food Pairing: Roast duck, beef tenderloin, foie gras, aged Comte, roasted almonds, toasted hazelnuts, dried figs, fruit cake, dark chocolate, walnut tart, and nutmeg-spiced desserts.

Tasting Notes: Copper-toned with amber highlights, showing remarkable complexity and maturity while remaining fresh and mellow, with dried fruit, dried flowers, nuts, spice and developed rancio.

Nose: Dried fruit and dried flowers with toasted almonds and hazelnuts, complemented by delicate nutmeg, saffron and other sweet spices.

Palate: Fresh and exceptionally rounded with very soft tannins, mature dried-fruit and nut character, gentle spice and pronounced rancio.

Finish: Remarkably long, mellow and persistent, with lingering dried fruit, nuts, rancio and warming spice.
