Charles Heidsieck Blanc des Millénaires 2007 is a prestigious, highly acclaimed Vintage Prestige Cuvée Champagne crafted entirely from Chardonnay sourced from the finest Grand and Premier Cru vineyards in the Côte des Blancs. Having matured for over 12 years on its lees in ancient chalk cellars (crayères), it displays a luminous pale gold color with a microscopic, persistent effervescence. The complex bouquet reveals layered notes of candied lemon, toasted hazelnut, brioche, dried apricots, and subtle chalky mineral undertones. On the palate, it exhibits a silky texture, lively acidity, and deep flavors of citrus oil, roasted nuts, and white peach, concluding with an exceptionally long, elegant finish.
Food Pairing: Pairs exquisitely with pan-seared scallops, fresh oysters, lobster thermidor, roasted turbot, creamy wild mushroom dishes, or aged Parmigiano-Reggiano cheese.

Born of a cool growing season, the 2007 Blanc de Blancs Blanc des Millénaires, disgorged in 2023, opens in the glass with aromas of white peach, lemon confit, blanched almonds and buttered pastry, mingled with notes of quince and subtle roasted nuances. Medium-bodied and pillowy, the palate is animated by racy acidity and structured around chalky extract, culminating in a long, saline finish. Somewhat leaner in profile, it does not appear to possess the concentration displayed by the cuvée’s finest renditions.

Sleek and linear, with racy acidity defining the up-front impact on the palate, but then the plushly creamy texture deftly delivers woven aromas and flavors of apricot and ripe white raspberry, pickled ginger, white blossoms and salted Marcona almond, allowing them to expand through to the mineral-laced finish.
