Named for the fossilized bones found in its limestone-heavy, calcareous soil, this wine is defined by its remarkable mineral tension and purity. It presents a brilliant pale yellow color and opens with an aromatic profile of jasmine, lemon peel, and white peach, underscored by signature notes of wild mint and dried herbs. On the palate, it is medium-bodied and exceptionally precise, featuring a vibrant, stony acidity and a characteristic saline finish. The 2023 vintage is noted for its elegance and lifted floral character, having aged gracefully in French oak to add a subtle, creamy texture without masking its distinctive terroir.
