About the Castello Di Monsanto Nemo Cabernet Sauvignon 2015
Castello Di Monsanto Nemo 2015 is an exceptionally bold, elegant, and varietally pure Super Tuscan red wine crafted entirely from estate-grown Cabernet Sauvignon planted in the Il Mulino vineyard. In the glass, it presents a concentrated ruby hue with subtle violet glimmers, unfurling a highly expressive bouquet of blackcurrant, sour plum, and fresh herbs accented by notes of cedar wood, tobacco leaf, and a distinct hint of flinty minerality. On the palate, this full-bodied, structural powerhouse seamlessly marries its rich core of dense black fruits with a vibrant line of natural acidity and velvety, fine-grained tannins developed during 18 months of meticulous aging in new French oak barriques. Reflecting the magnificent, highly celebrated 2015 Tuscan growing season, it tapers into a long, mouthwatering finish defined by a complex, savory, and dry volcanic mineral grip.
Food Pairing: Pairs brilliantly with roasted venison loin, thick-cut dry-aged ribeye steak, slow-braised wild boar ragù, or a decadent wild mushroom truffle risotto.

Sporting a smart new label design, the 2015 Cabernet Sauvignon Nemo is a confident and varietally pure expression of the grape. Despite the heat and the sunshine of the vintage, the cooler conditions of Barberino Val d'Elsa allow for some spice and green herb to accent the bouquet here. At its core, the wine shows a thick heart of blackberry fruit and sour plum. Give it a few more months to gain in weight and volume thanks to extra bottle aging.

Hints of bell pepper in the aroma give way to cherry, plum, cedar, iron and coffee flavors in this tightly wound red. Complex, but needs time for all the facets to emerge. Best from 2021 through 2035.

This is a little reductive and needs decanting before serving. Full body, soft and velvety tannins with lots of currant, fresh herb and tile. Savory finish. Decadent. Drink or hold.
