Castello di Bolgheri Varvara 2021 is a rich, polished, and beautifully structured Super Tuscan red wine crafted by Castello di Bolgheri in the prestigious coastal region of Tuscany. A harmonious blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, this wine undergoes temperature-controlled stainless steel fermentation followed by aging in oak barrels. In the glass, it exhibits a saturated ruby-purple color. The aromatic profile is complex and expressive, opening with notes of dark blackcurrant, black cherry, licorice, and eucalyptus alongside hints of Mediterranean scrub, leather, and subtle spice. On the palate, it is medium-to-full-bodied with a velvety texture, showing balanced acidity, firm fine-grained tannins, and a long, savory finish.
Food Pairing: Pairs wonderfully with grilled ribeye steak, roasted rack of lamb, wild boar ragù, braised beef short ribs, and aged Pecorino cheese.

The 2021 Bolgheri Rosso Varvàra shows inky black fruit and rich concentration with a hint of black olive or caper flower. This is another of the historic value wines of Bolgheri that is generous, thickly layered but also accessible. There is a hint of spice on the close that recalls black pepper and chili flake. The blend is 55% Cabernet Sauvignon, 28% Merlot, 12% Cabernet Franc and 5% Petit Verdot, with 90,000 bottles made.
