Signatory Caol Ila 2012 13 Year Old 100 Proof #70 is an independent single malt Scotch whisky release from Signatory Vintage as part of their 100 Proof Edition series. Distilled at the Caol Ila Distillery in 2012 and aged for 13 years, it was matured in first-fill and refill Oloroso sherry butts alongside refill hogsheads before being bottled at 57.1% ABV (100 Imperial proof) without chill filtration or added color.

Food Pairing: Smoked bacon, dark chocolate truffles, blue cheese, cured meats, or fresh oysters.

Tasting Notes : Deep golden in color with a full-bodied, rich, and oily mouthfeel.

Nose : Soft coastal sea breeze, peaty smoke, oily lemon zest, maple syrup cured bacon, and dried fruit with subtle floral notes.

Palate : Complex balance of sweet salted caramel, dark berries, cracked black pepper, cocoa powder, warm baking spices, and persistent peat smoke.

Finish : Long, warm, and drying with lingering wood smoke, sea salt, dark fruit sweetness, and gentle oak spice.

Serve : Serve neat at room temperature in a Glencairn glass, or add a few drops of water to open up the sherry sweetness and soften the cask-strength warmth.
