Signatory Vintage Cask Strength Collection Caol Ila 17 Year Old 2007 Cask #6 Single Malt Scotch Whisky

Signatory Vintage Cask Strength Collection Caol Ila 17 Year Old 2007 is an exceptional independently bottled single malt Scotch whisky from Caol Ila Distillery on Scotland's Isle of Islay. Distilled in 2007 and bottled in 2025 after 17 years of maturation, this expression was drawn from a first-fill Oloroso sherry butt, Cask #6, at a powerful natural cask strength of 57.7% ABV. Limited to just 677 bottles, it beautifully combines Caol Ila's signature coastal peat smoke with the rich dried-fruit sweetness, warming spices and depth of sherry cask maturation.

Food Pairing: Pairs beautifully with smoked brisket, barbecued pork ribs, aged cheddar, roasted walnuts and dark chocolate. Sticky toffee pudding, chocolate-covered raisins and charcuterie complement its smoky, sherried character.

Tasting Notes: A full-bodied Islay single malt featuring coastal peat smoke, rich Oloroso sherry sweetness, dried fruits and warming oak spice.

Nose: Aromas of raisins, dried figs, rich sherry, coastal peat smoke and gentle maritime salinity.

Palate: Layers of dark dried fruit, smoky malt, brine, caramelized sweetness and warming spice, supported by rich Oloroso oak.

Finish: Long and warming, with lingering peat smoke, dried fruits, subtle oak tannins and savoury coastal spice.
