The Cambridge Distillery Anty Gin is a pioneering joint venture between Master Distiller William Lowe of The Cambridge Distillery and Nordic Food Lab. Created using custom glass vacuum stills, each batch incorporates the distillate of approximately 62 red wood ants (Formica rufa) foraged from Kentish forests. The ants produce formic acid, which lends a sharp, citrusy brightness to the liquid. Blended alongside wild hand-foraged botanicals including wood avens, nettle, and alexanders seed, this experimental spirit delivers a complex, crisp, and savory flavor profile.

Food Pairing: Fine charcuterie, wild game dishes, aged goat cheese, roasted root vegetables, and savory mushroom tartlets.

Tasting Notes: Crystal clear in appearance with a smooth, bright, and vibrant mouthfeel.
