About the Adrien Camut Reserve de Semainville Calvados du Pays d'Auge
Crafted at the Domaine de La Rarier in La Laonde, Normandy, Adrien Camut "Réserve de Semainville" (Assemblage de 25 ans) is a benchmark expression named after the ancestral Camut family property. Operating under the strict Calvados Pays d'Auge AOC appellation, the Camut family maintains 45 hectares of traditional high-stem (haut-tige) orchards growing around 25 to 30 indigenous cider apple varieties. The fruit undergoes a single autumn pressing, followed by a prolonged 10 to 11-month natural fermentation driven exclusively by wild airborne yeasts in large oak vats with zero added sulfites or temperature controls. Double-distilled in custom wood-fired copper pot stills designed by the family, the spirit is transferred into large seasoned French oak casks (foudres and demi-muids). "Réserve de Semainville" is an assemblage composed of exceptional eaux-de-vie aged for a minimum of 25 to 30 years. Uniquely, the barrels are kept filled to only 75% capacity to encourage long, slow oxidation, allowing a quarter century of oak integration to introduce delicate rancio, deep wood spice, and cocoa undertones without overpowering the core of concentrated baked apple essence.
Food Pairing: Fine dark chocolate (70% cacao), aged Roquefort or Stilton blue cheeses, roasted duck breast with spiced apple glaze, tarte Tatin with vanilla bean gelato, roasted venison, or paired alongside a medium-to-full-bodied cigar.
Tasting Notes: Deep amber-copper in appearance with warm mahogany highlights, superb clarity, a rich, velvety body, and slow, coating legs.
Nose: Intensely aromatic, refined, and multi-layered, opening with baked apple, tarte Tatin, and orange marmalade, accompanied by polished wood, dried figs, pipe tobacco, dark cocoa, subtle leather, and a delicate rancio lift.
Palate: Silky, round, and deeply concentrated on the palate, featuring caramelized apple reduction, candied citrus peel, and dark honey upfront before unfolding into toasted walnuts, dark chocolate, sweet cedar, dried apricoth, nutmeg, and soft oak tannins.
Finish: Exceptionally long, warm, and elegant with lingering notes of stewed apples, dried fruit conserve, sweet tobacco, gentle wood spice, and an enduring, velvety warmth.
Serve: Enjoy neat at room temperature in a tulip glass or fine cognac snifter following a meal as a contemplative digestif, allowing it to rest for 10 minutes in the glass to fully express its complex quarter-century-old bouquet.
