About the Boulard XO Calvados Pays d'Auge 500ml
Crafted in the heart of Normandy, France, by Calvados Boulard—founded in 1825 by Pierre-Auguste Boulard—Boulard XO (Extra Old) is a masterfully blended flagship expression presented in an elegant 500ml format. Operating under the strict Calvados Pays d'Auge AOC appellation, Boulard sources cider apples exclusively from the designated Pays d'Auge terroir, blending over 120 distinct cider apple varieties encompassing bitter, bittersweet, sweet, and acidic profiles. Following natural cider fermentation, the liquid is double-distilled in traditional copper pot stills (alambic à repasse). The resulting eaux-de-vie are laid down in seasoned French oak casks in the cellars of Coquainvilliers for a minimum of 6 years, with many components in the blend aged up to 15 years. Over years of wood interaction, the energetic apple fruit transforms into a rich, velvety spirit that harmonizes complex baked apple, dark dried fruit, toasted oak, vanilla, and warm spice.
Food Pairing: Fine dark chocolates (70% cacao), aged Normandy cheeses (Livarot, Pont-l'Évêque), tarte Tatin with spiced crème fraîche, roasted duck breast, walnut cake, or paired alongside a fine cigar.
Tasting Notes: Rich amber-mahogany in appearance with warm copper reflexes, superb clarity, a smooth medium-to-full body, and slow, coating tears.
Nose: Intensely aromatic, rich, and elegant, opening with baked apple, tarte Tatin, and dried apricoth, accompanied by toasted oak, vanilla bean, dried figs, roasted hazelnut, and soft baking spices.
Palate: Velvety, smooth, and multi-layered on the palate, featuring caramelized apple reduction, dark honey, and candied citrus peel upfront before unfolding into soft oak tannins, cinnamon, nutmeg, dark cocoa, and toasted almond.
Finish: Long, warm, and lingering with persistent notes of stewed apples, dried fruit conserve, sweet wood spice, and a refined, velvety warmth.
Serve: Best enjoyed neat at room temperature in a tulip glass or cognac snifter following a meal as a sophisticated digestif, allowed to breathe for a few minutes in the glass.
