About the Boulard Grande Fine Calvados Pays d'Auge 500ml
Crafted in the heart of Normandy, France, by Calvados Boulard—founded in 1825 by Pierre-Auguste Boulard—Grand Solage (historically designated as Grande Fine) is the cornerstone entry of this historic family house. Operating under the prestigious Calvados Pays d'Auge AOC appellation, Boulard sources 100% of its cider apples from the designated Pays d'Auge terroir, utilizing up to 120 distinct cider apple varieties encompassing bitter, bittersweet, sweet, and acidic profiles. The apple juice undergoes a natural fermentation to create a balanced cider, which is then double-distilled in traditional copper pot stills (alambic à repasse). The resulting clear spirit is aged for a minimum of 2 to 5 years in neutral French oak casks (foudres and toasted oak barrels) in the cellars of Coquainvilliers. This careful wood maturation rounds out the spirit's energetic edges while preserving an exceptionally bright, fruity, and aromatic core of crisp green apple, fresh cider, toasted wood, and light vanilla.
Food Pairing: Normandy cheeses (Camembert, Pont-l'Évêque), pork chops with apple-mustard sauce, tarte Tatin, duck breast, apple turn-overs, or dark chocolate mousse.
Tasting Notes: Clear, bright golden-amber in appearance with brilliant clarity, a light-to-medium smooth body, and clean, fast-moving tears.
Nose: Fresh, vibrant, and fruit-forward, opening with crisp orchard apples, fresh apple cider, and white floral blossom, accompanied by soft vanilla, subtle oak wood, candied lemon peel, and light baking spices.
Palate: Crisp, fruity, and mouth-watering on the palate, featuring sweet apples, tarte Tatin, and citrus zest upfront before developing into light vanilla bean, soft oak wood tannins, nutmeg, and subtle toasted almond.
Finish: Medium-long, clean, and refreshing with lingering notes of crisp apple skin, gentle oak spice, and a warm, elegant spirit finish.
Serve: Enjoy neat or on the rocks in a tulip glass, served as a classic Trou Normand palate cleanser between meal courses, or utilized as an aromatic base spirit for premium craft cocktails such as a Calvados Sour, Jack Rose, or Old Fashioned twist.
