About the Adrien Camut Rarete Calvados Pays d'Auge
Crafted at the Domaine de La Rarier in La Laonde, Normandy, Adrien Camut "Rareté" represents the absolute pinnacle of Calvados production—an extraordinary, highly prized cuvée bottled in extremely limited quantities. Operating under the strict Calvados Pays d'Auge AOC appellation, the Camut family maintains 45 hectares of traditional high-stem (haut-tige) orchards growing over 25 indigenous cider apple varieties. The fruit undergoes a single autumn pressing, followed by a long, 10 to 11-month natural fermentation driven exclusively by wild yeasts without chemical inputs, sulfites, or temperature controls. Double-distilled in the estate's proprietary wood-fired copper pot stills, the resulting eau-de-vie is filled to only 75% capacity in large seasoned French oak casks (foudres and demi-muids) to encourage maximum interaction with air. "Rareté" is an ultra-rare assemblage composed of the family’s oldest and most exceptional barrels, aged between 50 and over 100 years. The result is an immortal spirit of unparalleled depth, seamlessly fusing century-old oak complexity, exquisite rancio, and profound baked apple essence.
Food Pairing: Exceptionally rare dark chocolates (80%+ single-origin), fine blue cheeses (such as Stilton or Roquefort), dark fruit tarts, or savored entirely on its own alongside a rare vintage cigar.
Tasting Notes: Deep dark mahogany in appearance with intense antique amber and green-gold rim highlights, brilliant clarity, a dense, velvety full body, and extremely slow, viscous legs that cling to the glass.
Nose: Remarkably profound, antique, and infinite, opening with dried fig, dark raisins, prune, and baked apple concentrate, accompanied by polished mahogany wood, cedar, leather, cigar box, dark cocoa, beeswax, and an intense, noble rancio.
Palate: Sumptuous, incredibly smooth, and multi-layered, featuring caramelized apple reduction, dark honey, and candied citrus peel upfront before unfolding into espresso bean, dark chocolate, toasted walnut, sweet pipe tobacco, nutmeg, clove, and ancient oak tannins of extraordinary finesse.
Finish: Unending, warm, and meditative, lingering for several minutes with persistent notes of dried dark fruits, noble oak, sweet spices, dark cocoa, and an enduring, silky warmth.
Serve: Enjoy neat at room temperature in a tulip-shaped tasting glass or fine cognac snifter, allowing the spirit to rest in the glass for at least 15 to 20 minutes to slowly reveal its historic complexity.
