About the Adrien Camut Privilege Calvados du Pays d'Auge 18 ans d'Age
Crafted at the Domaine de La Rarier in La Laonde, Normandy, Adrien Camut "Privilège" (Assemblage de 18 ans) represents a sweet spot of maturity in the estate’s world-renowned portfolio. Operating under the strict Calvados Pays d'Auge AOC appellation, the Camut family cultivates 45 hectares of traditional high-stem (haut-tige) orchards growing over 25 indigenous cider apple varieties. Following a single autumn pressing without chemical inputs, the juice undergoes an extended 10 to 11-month natural fermentation driven by wild airborne yeasts in large oak vats with zero added sulfites or temperature controls. Double-distilled in custom wood-fired copper pot stills designed by the family, the spirit is transferred into large, seasoned French oak casks (foudres and demi-muids). "Privilège" is an assemblage of carefully selected eaux-de-vie aged for a minimum of 18 years. Uniquely, the barrels are kept filled to only 75% capacity to promote controlled oxidation, allowing nearly two decades of wood interaction to layer rich tertiary notes of toasted oak, dried fruits, and warm baking spices over a core of vibrant baked apple purity.
Food Pairing: Aged Normandy cheeses (Livarot, Pont-l'Évêque), tarte Tatin with spiced crème fraîche, roasted duck breast with apple-cider reduction, roasted venison, dark chocolate truffles, or almond cake.
Tasting Notes: Rich mahogany-amber in appearance with brilliant copper highlights, superb clarity, a silky medium-to-full body, and slow, coating tears.
Nose: Deeply aromatic, rich, and layered, opening with baked apple, tarte Tatin, and candied orange peel, accompanied by polished oak, vanilla bean, dried figs, roasted hazelnut, and a delicate touch of pipe tobacco.
Palate: Velvety, smooth, and concentrated on the palate, featuring caramelized apple reduction, dried apricoth, and dark honey upfront before unfolding into soft oak tannins, cinnamon, nutmeg, dark cocoa, and subtle toasted almond.
Finish: Exceptionally long, warm, and elegant with lingering notes of sweet baked apple, subtle wood spice, dried fruit conserve, and a lingering, velvety warmth.
Serve: Enjoy neat at room temperature in a tulip glass or cognac snifter following a meal as a refined digestif, allowed to breathe for several minutes to fully express its complex bouquet.
