About the Adrien Camut Prestige Calvados du Pays d'Auge
Crafted at the Domaine de La Rarier in La Laonde, Normandy, Adrien Camut Prestige represents one of the most sublime and sought-after expressions produced by this legendary family estate. Operating under the strict Calvados Pays d'Auge AOC appellation, the Camut family cultivates 45 hectares of traditional high-stem (haut-tige) orchards growing over 25 indigenous cider apple varieties without chemical fertilizers or pesticides. Following a single autumn pressing, the fresh juice undergoes a prolonged 10 to 11-month wild-yeast natural fermentation in large oak vats with zero additives or temperature modification. Double-distilled in the estate's custom wood-fired copper pot stills, the spirit is transferred into large seasoned French oak casks (foudres and demi-muids). "Prestige" is a rare, small-batch assemblage composed of eaux-de-vie aged between 40 and 50 years. Barrels are famously filled to only 75% capacity to encourage long, slow oxidation, allowing decades of wood integration to transform the intensely concentrated apple base into a silky, multifaceted masterpiece of immense elegance, depth, and aromatic longevity.
Food Pairing: Fine dark chocolates (70%+ cacao), aged Roquefort or Stilton blue cheeses, roasted venison with poached pear, tarte Tatin with spiced crème anglaise, or paired alongside a full-bodied Cuban cigar.
Tasting Notes: Deep mahogany-amber in appearance with glints of antique copper, superb clarity, a rich velvety body, and dense, slow-descending legs.
Nose: Intensely complex, aristocratic, and evolving, opening with stewed apples, tarte Tatin, and orange marmalade, accompanied by polished mahogany wood, pipe tobacco, dried figs, leather, cocoa bean, and a delicate rancio lift.
Palate: Unusually smooth, rich, and harmonious on the palate, featuring caramelized apple reduction, candied citrus peel, and dark honey upfront before unfolding into toasted walnuts, dark chocolate, sweet cedar, dried apricots, nutmeg, and ancient oak tannins.
Finish: Exceptionally long, warm, and meditative with lingering notes of baked apple, dried fruit conserve, sweet tobacco, gentle wood spice, and an enduring, silky warmth.
Serve: Enjoy neat at room temperature in a tulip glass or cognac snifter, allowing it to rest for 10 to 15 minutes to fully open its subtle layers of half-century-old aromas.
