About the Adrien Camut Calvados du Pays d'Auge 6 ans d'Age
Crafted at the Domaine de La Rarier in La Laonde, Normandy, Adrien Camut is widely regarded by connoisseurs as the benchmark for benchmark artisanal Calvados. Operating under the prestigious Calvados Pays d'Auge AOC appellation, the Camut family maintains 45 hectares of traditional high-stem (haut-tige) orchards growing around 25 to 30 distinct indigenous cider apple varieties—balancing sweet, bittersweet, bitter, and tart profiles. Uniquely, Camut uses no chemical fertilizers or pesticides, pressing the apples once in autumn and allowing the juice to undergo long, natural wild-yeast fermentation in oak vats for up to 11 months without added sulfites or temperature control. The cider is double-distilled in custom-built, wood-fired double-column copper pot stills designed by the family. The resulting young spirit is aged for a minimum of 6 years in large, seasoned French oak casks (foudres and demi-muids). To promote gentle oxidation and preserve pure fruit intensity, the barrels are filled only to 75% capacity, allowing the spirit to develop remarkable aromatic complexity, refined oak structure, and vibrant, pure apple purity without heavy wood tannins.
Food Pairing: Normandy cheeses (Camembert, Livarot, Pont-l'Évêque), tarte Tatin with crème fraîche, pork tenderloin with apple reduction, roasted duck, blue cheeses, or dark chocolate.
Tasting Notes: Luminous golden-amber in appearance with brilliant clarity, a silky medium body, and slow, delicate legs.
Nose: Intensely aromatic, fresh, and complex, opening with crisp red apple skin, baked tarte Tatin, and orchard blossoms, accompanied by sweet orange peel, fresh cider, vanilla bean, and a subtle damp earthiness.
Palate: Elegant, supple, and mouth-watering on the palate, featuring caramelized apple slices, sweet honey, and tarte Tatin upfront before unfolding into soft oak spice, light cinnamon, nutmeg, lemon verbena, and toasted almond.
Finish: Long, clean, and refreshing with lingering notes of crisp apple cider, gentle oak wood, sweet pastry, and a warm, refined spice.
Serve: Enjoy neat at room temperature in a tulip glass or cognac snifter following a meal as a digestif, or as a classic Trou Normand palate cleanser between heavy courses.
