Signatory 100 Proof Bunnahabhain 8 Year Old 2016 Edition #31 is an independently bottled Islay single malt Scotch whisky distilled at Bunnahabhain in 2016 and matured for eight years in a combination of first- and second-fill Oloroso sherry butts. Bottled by Signatory Vintage in 2024 at 57.1% ABV as part of its 100 Proof Editions series, this unpeated Bunnahabhain is presented without added colour or chill filtration. 

Food Pairing: Pair with roast beef, glazed pork, aged cheddar, roasted nuts, fruitcake or dark chocolate.

Tasting Notes: Rich and sherry-driven, combining mature malt, dried and tropical fruit, warming spice and a subtle coastal character.

Nose: Malt and cereal notes mingle with dried fruit, orange, dark berries and gentle Oloroso richness.

Palate: Full and robust, with dried fruit, cherry, brown sugar and orange peel alongside cinnamon, nutmeg, clove and pepper.

Finish: Long and warming, with lingering sherry fruit, oak spice, malt sweetness and a touch of coastal salinity.
