About the Bozal Cuishe Mezcal
Crafted in San Luis del Río, Oaxaca, Mexico, Bozal Cuishe is a distinctive single-maguey artisanal mezcal produced from wild Agave karwinskii (Cuishe). Growing in a tall, tree-like cylindrical structure, Cuishe agave takes 12 to 15 years to mature on dry, rocky slopes. The wild-harvested heart and stalk are slow-cooked in traditional underground conical stone pits fueled by oak wood, crushed using a horse-drawn stone tahona wheel, and open-fermented in pine wood vats with natural wild airborne yeasts. Double-distilled in traditional copper pot stills, this unaged expression highlights Cuishe’s signature intense minerality, bright tropical fruitiness, and complex herbaceous smoke profile, presented in Bozal's signature blue ceramic bottle.
Food Pairing: Roasted pork carnitas, grilled octopus with paprika oil, Oaxacan mole verde, aged Manchego cheese, roasted poblano peppers, or dark chocolate with sea salt.
Tasting Notes: Crystal clear in appearance with bright clarity, a silky medium body, and slow, delicate tears.
Nose: Fresh, complex, and mineral-driven, opening with sweet cooked agave, damp earth, and light mesquite smoke, accompanied by white pepper, green bell pepper, citrus zest, and tropical fruit notes.
Palate: Vibrant, dry, and earthy on the palate, featuring caramelized agave, green melon, and roasted pineapple upfront before unfolding into layers of soft wood smoke, chalky minerality, fresh herbs, and cracked black pepper.
Finish: Long, clean, and crisp with lingering notes of sweet agave nectar, gentle oak smoke, zesty grapefruit, and a dry, lingering mineral warmth.
Serve: Enjoy neat at room temperature in a traditional clay copita or Glencairn glass to experience the full aromatic depth and unique terroir of wild Cuishe agave.
