Senorio de Astobiza Dry Gin

Señorío de Astobiza Dry Gin is a distinctive Spanish craft spirit produced by the Astobiza winery in the Ayala Valley of the Basque Country. Deeply connected to local winemaking traditions, this gin utilizes neutral spirit distilled from the estate's own hand-harvested Ondarrabi Zuri grapes (the native white grape cultivar used for producing traditional Txakoli wine). The spirit is crafted using cold copper pot distillation to protect delicate aromas. Its botanical bill includes estate-grown juniper, citrus peels (lemon and orange), blackberry leaf, strawberry leaf, and native Basque botanicals sourced directly from the winery's vineyards and surrounding meadows.

Food Pairing: Basque pintxos, grilled sardines, anchovies in olive oil, fresh oysters, octopus à la gallega, and cured sheep's milk cheese (Idiazábal).
