Domaine Billaud-Simon Chablis 2023 is an exceptionally pure, vibrant, and mineral-driven white wine produced by the historic Domaine Billaud-Simon in the heart of Chablis. Sourced from estate vineyards situated on classic Kimmeridgian limestone soils rich in marine fossils, the Chardonnay fruit is carefully harvested and cool-fermented in stainless steel tanks to preserve its natural crispness and site-specific terroir. In the glass, it displays a pale lemon hue with greenish reflections. The nose reveals bright, enticing aromas of green apple, lemon zest, white flowers, and crushed flint. On the palate, it is crisp, linear, and well-structured, combining ripe orchard fruit flavors with lively, electric acidity and a long, saline, chalky finish.
