About the Bibi Graetz Testamatta 2019
Bibi Graetz Testamatta 2019 is an iconic, highly benchmarked Super Tuscan red crafted entirely from 100% Sangiovese sourced from old, high-altitude vineyards around Vincigliata, Olmo, Fiesole, Siena, and Lamole. Produced by artist-turned-winemaker Bibi Graetz to mark the 20th anniversary vintage of Testamatta, this wine undergoes natural, spontaneous fermentation in open-top wooden casks with gentle hand-plunging, followed by 20 months of maturation in older French oak barriques and tonneaux. In the glass, it exhibits a brilliant ruby hue accompanied by complex aromatics of fresh red cherries, wild strawberries, crushed violets, dried oregano, citrus peel, and graphite minerality. On the palate, it delivers medium-to-full body with silky, ultra-fine tannins, vibrant natural acidity, and remarkable purity of fruit leading into a long, persistent, and elegant finish.
Food Pairing: Pairs wonderfully with Florentine T-bone steak, braised veal shank, roasted rack of lamb, wild mushroom risotto, and aged Pecorino Toscano.

Very attractive combination of dried fruit and spices with black cherries and plums. Aromas of flowers and sandalwood, too. Full-bodied and very refined, yet intense, with plush, velvety tannins that are wonderfully integrated and intertwined with the fruit. Ripe center palate. Tight at the end, suggesting the need for some serious bottle age. Very structured. Try after 2025.

The Bibi Graetz 2019 Testamatta is a little closed and shy. This is one of the first vintages in which Bibi did not do green harvest, a practice he has since avoided because he believes the vines find ideal balance when left alone. In fact, yields in 2017 were lower because of the heat, but they rebounded in 2019, with 20% more production. This wine has red fruits, currants and dusty mineral sensation to close.
