Bevan Cellars Ontogeny 2021

Bevan Cellars Ontogeny 2021 is a remarkably dense, powerful, and opulent Bordeaux-style red blend that showcases winemaking wizardry at its finest. Concocted primarily from the acclaimed Tench Vineyard alongside other elite parcels across the valley, it reveals a saturated, inky purple hue. The aromatics are intensely expressive, unrolling a multi-layered bouquet of crème de cassis, wild boysenberries, and crushed spring flowers, beautifully balanced by hints of tobacco leaf, charcoal, espresso, and sweet French oak spices. On the palate, this full-bodied blockbuster is incredibly rich and mouth-coating, delivering massive concentration and a luxurious, velvety texture that masks a solid, age-worthy framework of silky tannins. A vibrant undercurrent of natural acidity maintains striking clarity throughout its long, opulent finish.

Food Pairing: Pairs brilliantly with slow-roasted prime rib, rosemary-crusted grilled lamb chops, rich wild mushroom risotto, or a selection of mature, hard gouda cheeses.

94 Points - Robert Parker's Wine Advocate

The producer's entry-level red blend, still available for under a C-note, the 2021 Ontogeny Red Wine features lifted, slightly minty and vaguely herbal notions that impart a cool aspect to the wine's ripe cherry fruit. Full-bodied, creamy and lush, it lacks the terroir nuances of the single-vineyard wines, but it remains delicious and easy to drink, with a bright, fresh finish.
