Bardstown Bourbon Company Collaborative Series Silver Oak Bourbon

Bardstown Bourbon Company Collaborative Series Silver Oak Bourbon is a limited collaborative release marrying six mature straight bourbons sourced from Kentucky, Tennessee, Georgia, and Indiana. The component whiskies range from 9 to 15 years old before the final blend is finished for 17 months in Cabernet Sauvignon barrels from Silver Oak, the acclaimed Napa Valley winery. Bottled at 54% ABV (108 proof), the wine-cask finish adds layers of dark fruit, cocoa, spice, and tannic structure to the mature caramel and oak character of the bourbon.

Food Pairing: Smoked brisket, grilled ribeye, barbecue short ribs, roasted duck, aged cheddar, toasted walnuts, dark chocolate, and blackberry or fig desserts.

Tasting Notes: Rich and full-bodied with baked strawberry, plum, roasted nuts, cinnamon, cocoa, caramel, fig, dark berries, oak, and warming spice.

Nose: Baked strawberry and plum with roasted nuts, cinnamon, cocoa, caramel, and seasoned oak.

Palate: Full-bodied with caramel and fig leading into blackberry, mature oak, baking spice, and a lightly tannic Cabernet-influenced character.

Finish: Long and warming with lingering dark fruit, oak, spice, roasted nuts, and drying wine tannins.
