About the Baldur's Release No.006 9 Year Old Wheated Rye Canadian Whisky
Baldur's Release No.006 9 Year Old Wheated Rye Canadian Whisky is a limited small-batch release from Last Mountain Distillery in Lumsden, Saskatchewan. Made from a rye-dominant mashbill of 97% rye and 3% wheat, it was matured for nine years before being bottled at 48.2% ABV. The small addition of wheat softens the assertive character of Canadian rye, creating a rounded whisky that balances honey and fresh-baked bread with orchard fruit, vanilla, caramel, baking spice and toasted oak. Only 187 bottles were produced.
Food Pairing: Roast duck, barbecue pork, smoked brisket, aged cheddar, toasted pecans, pear tart, bread pudding, and caramel desserts.
Tasting Notes: Smooth and rounded, balancing rye-driven spice with honeyed sweetness, toasted grain, orchard fruit, vanilla and integrated oak.
Nose: Golden honey, fresh-baked bread and subtle orchard fruit, followed by vanilla cream, light caramel and toasted grain.
Palate: Vanilla, baking spice and pear with a rounded texture, toasted oak and rye spice softened by wheat.
Finish: Silky and lingering with gentle oak, delicate spice and honey.
