Domaine Paul Pillot Chassagne-Montrachet Premier Cru Clos Saint-Jean 2022

Crafted in the famed Côte de Beaune region of Burgundy, France, Domaine Paul Pillot Chassagne-Montrachet 1er Cru 'Clos Saint-Jean' Blanc 2022 is a masterclass in white Chardonnay precision produced by master vigneron Thierry Pillot. Situated at the heart of the slope above the village of Chassagne-Montrachet, the historic Clos Saint-Jean Premier Cru vineyard features thin, rocky limestone soils with red clay topsoil, giving the wine its signature high-toned aromatic lift, chiseled mineral drive, and refined elegance. Thierry Pillot practices organic, low-intervention viticulture with meticulous canopy management to achieve pristine fruit ripeness paired with electric natural acidity. In the ripe yet gorgeously balanced 2022 vintage, hand-harvested grapes were gently pressed and fermented using ambient yeasts. The wine matured on fine lees for 12 months in French oak barrels (approximately 20% new oak) followed by an additional 6 months in stainless steel tanks without battonage (stirring), yielding an extraordinary white Burgundy defined by razor-sharp mineral tension, crisp citrus energy, and magnificent cellaring potential.

Food Pairing: Pan-seared sea scallops, butter-poached lobster tail, grilled turbot, roast chicken with black truffle butter, crab cakes, and artisanal French cheeses like Comté, Époisses, or aged goat cheese.
