Archives Secret Islay 1990 (often identified by connoisseurs as an undisclosed Laphroaig) is a remarkably well-aged, independent bottling of single malt Scotch whisky. Distilled in 1990 and matured for over three decades in a refill hogshead, it was released by the esteemed independent bottler Archives as part of their acclaimed "The Fishes of Samoa" collection. Bottled at a natural cask strength, this 31-year-old expression beautifully showcases how intense Islay peat softens and evolves over decades. The nose offers a complex, maritime bouquet of gentle, glowing peat smoke, salty sea brine, oyster shells, and bright lemon zest, layered with earthy tobacco and subtle tropical fruits. The palate is intensely flavorful yet incredibly smooth, delivering a stunning interplay of pineapple, mango, and grapefruit alongside herbal notes, savory dried ginger, and a refined, earthy peatiness. The finish is extremely long, slightly peppery, and satisfyingly mineral-driven.
Food Pairing: Freshly shucked oysters, smoked salmon with capers, rich blue cheeses like Roquefort, and dark chocolate infused with sea salt.
