Wild Life Sherry Cask Single Malt Whisky

Wild Life Sherry Cask Single Malt Whisky is an Alberta single malt produced entirely by Wild Life Distillery in Canmore. Batch 001 is made from 100% Alberta malted barley, distilled in a 500L alembic copper pot still and aged for a minimum of four years. The whisky begins maturation in 53-gallon ex-bourbon barrels before being finished in Pedro Ximenez sherry casks sourced from a traditional Spanish bodega. Bottled at 46.1% ABV without chill filtration and at natural colour, it combines rounded malt character with rich dried fruit, baking spice and chocolate-driven sherry influence.

Food Pairing: Dark chocolate, sticky toffee pudding, fruitcake, roasted walnuts, aged cheddar, glazed pork, chocolate-covered raisins, and dried figs.

Tasting Notes: Rich and rounded, combining dried fruit, caramelized sweetness and malt with baking spice and layered oak.

Nose: Chocolate-covered raisins, chewy dried figs and caramelized brown sugar.

Palate: Baking spice, raisin bran and rounded malty notes.

Finish: Long and textural with fruit leather and a soft combination of French and American oak.
