About the Alambique Serrano Cartier 30
Alambique Serrano Cartier 30 is an unaged, high-proof artisanal Oaxacan rum produced by the Krassel family in Santa María Tlalixtac, Mexico. Made from 100% fresh pressed Java sugarcane juice grown at altitudes up to 4,000 feet, it is naturally fermented with wild yeast and distilled in a custom-built Krassel column still. Named after "30" on the hydrometer Cartier scale (roughly equivalent to 70% ABV), it is bottled at still strength without dilution, filtration, or added sugar.
Food Pairing: Rich Mexican mole, slow-roasted pork carnitas, ceviche, aged goat cheese, dark chocolate, and grilled pineapples.
Tasting Notes : Crystal clear in appearance, offering a remarkably thick, oily, and full-bodied mouthfeel on the palate.
Nose : Vibrant green olives, slate minerality, lemon-lime zest, fresh sugarcane, subtle vinegary funk, leather, and floral honey.
Palate : Savory, rich, and mouth-coating with notes of green olive brine, salted lemon peel, cracked pepper, sweet raw cane, subtle red wine vinegar, and soft spice.
Finish : Long, heavy, and complex with lingering brine, minerality, citrus peel, and savory herbal notes.
Serve : Best enjoyed neat at room temperature in a Glencairn glass, with a few drops of water to open up aromas, or served in a classic Ti' Punch.
