About the Aileron Cabernet Sauvignon 2019
Crafted by winemaker Shannon Staglin from Atlas Peak, this mountain Cabernet Sauvignon offers intense mountain fruit and striking structure. It reveals layered aromas of crème de cassis, dark plum, and espresso, framed by firm, age-worthy tannins and a sophisticated mineral backbone.
Food Pairing: Pair it with charred ribeye steak, roasted venison loin, or braised beef short ribs to beautifully balance its bold, mountain-grown tannins.
91 Points - Robert Parker
From the estate Altimeter Vineyard on Atlas Peak, the 2019 Cabernet Sauvignon is quite dark in overall tone, with plummy and chocolate-like fruit notes. It's full-bodied and rich, with ample concentration and a long, velvety but slightly warm finish. Despite the high-altitude setting, it appears to be a wine to enjoy on the young side.
