About the Emidio Pepe Pecorino Colli Aprutini 2021
Emidio Pepe Pecorino 2021 is produced from the indigenous Pecorino grape in Abruzzo. The exceptionally dry 2021 season prompted earlier harvesting to preserve acidity and potential alcohol, while biodynamic vineyard preparations supported ripening. The resulting wines retained notable tension and a saline character.
Food Pairing: Pairs best with grilled sea bass, roasted shellfish, seafood pasta, poultry, and aged pecorino cheese.

Lightly cloudy and dark gold. This shows intense umami savoriness with little fruit freshness. It's intense and complex, with aromas of yeast, bread, miso, minerals, light cheese, almonds, honeysuckle and dried kumquats. Full-bodied yet supple on the palate, with a very light grip and a broad, lengthy finish. This is absolutely fascinating. The more time I spent tasting this, the higher the score. Don't chill it too much. Delicious now, but it can hold.
