About the Signatory Vintage Cask Strength Collection Caol Ila 16 Year Old 2007 Cask #7
Signatory Vintage Cask Strength Collection Caol Ila 16 Year Old 2007 Cask #7 is a heavily peated Islay single malt Scotch whisky independently bottled by Signatory Vintage. Distilled at Caol Ila in September 2007, this 16-year-old expression matured in first-fill Oloroso Sherry Butt #7 before being bottled in April 2024 at a cask strength of 58.4% ABV. Limited to just 682 bottles, it brings together Caol Ila's distinctive maritime peat smoke with the dark fruit, chocolate, spice and richness of Oloroso sherry maturation.
Food Pairing: Pair with smoked brisket, chargrilled lamb, blue cheese, dark chocolate, roasted nuts or rich fruitcake.
Tasting Notes: Powerful and richly sherried, balancing maritime peat smoke and salinity with dried fruit, chocolate, warming spices and deep Oloroso sweetness.
Nose: Peat smoke and coastal character mingle with dried fruit, dark chocolate, leather and warming spice.
Palate: Full-bodied and intense, with smoky peat, rich sherry fruit and dark chocolate complemented by saline notes, spice and seasoned oak.
Finish: Long, smoky and warming, leaving lingering peat, dried fruit, sea salt, dark chocolate and spice.
